Over 1million people are affected by food allergies

Food allergies are life changing and require an enormous amount of care when preparing food. In the UK, 2% of adults and 8% of children are affected by food allergies and rely on trusting food businesses, to be honest, and truthful about the ingredients they use in their food. Understandably, some people are even completely put off about eating out due to the fear they could become ill. Under EU law, food businesses need to be completely transparent and provide information about any of 14 main allergens used in food on site. The main allergens are:

Celery, Cereal (with gluten), Crustaceans, Eggs, Fish, Lupin, Milk, Molluscs, Mustard, Tree Nuts, Peanuts, Sesame Seeds, Soybeans, Sulphur Dioxide. 

  • Diners are allowed and have a right to ask for information about allergens that could be used in their food
  • Food allergies should also be clearly visible on signs or on menus 

New European guidelines have resulted in the introduction of 'purple' colour coded equipment. Colour-designated equipment has been available for many years to help prevent cross-contamination. Purple chopping boards, knives and containers helps chefs to separate harmful allergic ingredients and cook safely, without cross-contaminating.
